Bodegas Ramon Bilbao ‘Mirto’
RM265.0
Everything in this wine is an art, from the way the grape clusters are chosen at the bodega´s sorting table, to their fermentation in small French oak vats. After painstaking fermentation at controlled temperatures to achieve the highest extraction of aromas and colour, the wine is placed in barriques where malolactic fermentation takes place without racking, just the periodic stirring of the lees using the ‘batonnage‘ technique. It spends 19 months in new French Allier oak cask with a medium and medium plus toast level. The wine is bottled without being subjected to any fining or filtering.
Bright and very intense red purple color. The aromas are powerful, well developed and sophisticated with memories of tobacco, cassis, chocolate coating and cedar wood. Its mouthfeel is filled with sensations of blackcurrants, plums and chocolate with a juicy depth and fresh concentration. The aftertaste lasts pleasantly with a well assembled finish. Ideal serving temperature is between 18C to 19C. A marvellous companion to smoked flavors, such as wild mushrooms and truffles. Combines nicely with spiced dishes and unsmoked, medium-cured soft cheeses.

Description
Bodegas Ramon Bilbao, S.A. was founded in 1924 although in the previous century, around 1896, D.Ramon Bilbao Murga was already selling Ramon Bilbao and Viña Turzaballa wines in his bodega in the heart of Haro, in Las Cuevas street, while becoming one of the pioneering winemakers and a great lover of the art.
The winemaking philosophy at Ramon Bilbao is driven by Rodolfo Bastida, who is committed to crafting wines that express the grapes and terroir as much as possible. Rioja born and bred, Bastida’s appointment as chief winemaker in 1999 marked the moment the estate began their journey towards defining a new Rioja style: wines that are powerful and structured but with balanced acidity and, above all, freshness. By pursing these more elegant wines, Ramon Bilbao has rebelled against the oaky, fruit-driven wines characteristic of the region.
