Sourced exclusively from the village of Pouilly-Fume, which tend to be richer than Sancerre, the wine has plenty of zip with lemon/lime skins, straw and floral hints in the nose. Vibrant yellow colour with restrained aromas of citrus, apple and flint. It is precise and layered with clean, driving acidity, elegance and finesse. Great with smoked salmon, shellfish, grilled fish, vegetable dishes or goats’ cheese.

Description
Pascal Jolivet – founded in 1987, is one of the Superstars of the Loire Valley in Central France. Based in Sancerre, the domaine now owns over 120 acres of prime vineyards spread across the appellations of Sancerre and Pouilly-Fume – producing superb pure and deeply aromatic wines, from Sauvignon Blanc and Pinot Noir grapes.
The wine style is the result of a meticulous work based on gravity, from collecting grapes at harvest to vinification to bottling. The combination of the various terroirs: limestone, clay and flint. 100 % indigenous yeasts and slow fermentations confer unique finesse and minerality with an extremely well-integrated acidity.
In 2016, continuing his quest to attain ultimate authenticity in his wines, Pascal launches a partnership with Dauny family. Pioneering organic viticulture from 1966 on, Benoit Dauny is given supervision over the 50 hectares of the Domaine by Pascal, who relies on his 50 years of organic viticultural experience. Henceforth, the Domaine will produce organic grapes.
